The almond tree (Prunus dulcis) is a very long-lived plant of the Rosaceae family that grows up to 5-10m in height and is native to south-western Asia. The flowers are white or slightly pinkish with 5 petals and they usually bloom in early spring (late February, if the climate is mild).
There are three harvest times for almonds:
- Spring: whole fruits for fresh consumption. Harvesting is prior to shell lignification.
- Early summer: seeds for fresh consumption, obtained through hulling and shelling after they’ve reached a solid state.
- Midsummer: hulled/shelled seeds for dry consumption. In this case, the fruit has reached maturity on the tree.
There are two harvesting methods: traditional (typical of Mediterranean and Asian areas) and mechanical. The latter is frequently adopted by Californian companies, and consists of shaking the trunk of the tree, causing the husks to fall off. The world's largest producer of almonds is California, followed by Spain, Iran and Italy.

History
The almond tree is native to Central Asia and numerous wild species can be found in Iran, Afghanistan and Azerbaijan. Some wild forms are also found in Arizona, USA.
Domestic almond trees appeared in the early Bronze Age (3000-2000 BC). An archaeological example of an almond tree is the fruit found in Tutankamon's tomb in Egypt (around 1325 BC), probably imported from the Levant.
The Romans called the almond tree by the name of ‘Greek walnut’, because in ancient times the almond tree first spread to Greece and later to Italy. The almond tree is mentioned in Scribonius Largo's pharmacological recipe book and in Pliny's works from the 1st century AD.
The Romans contributed to spreading the almond tree, by bringing it to Alpine foothills and beyond. Its properties, already known by Hippocrates, were recognised by the Arabs, who in the Middle Ages made them known to the countries of the Mediterranean basin in all official pharmacopoeias and traditional medicine. The introduction of the almond tree in North America dates back to the 16th century, while the plant arrived in Chile in the second half of the 17th century.
Hulls and shells represent by-products rich in carbohydrates that are used in cattle feed. Among other uses of almonds, the shells are also used as raw material for the constitution of pellets for biomass heating: the harvested raw material undergoes a grinding, sizing and homogenisation process in order to make this by-product compatible with the technological requirements of small biofuel boilers (storage, feeding, dosing). The pellets thus obtained are excellent substitutes for wood sawdust pellets.
